Cervantes Lee is a USCEducation Doctor (August 2021) with dissertation topic in creating themulti-unit fast-casual restaurant curriculum for UNLV Hospitality College. Thenew program is gifted by the co-founders of Panda Express. His researchinterest focuses on restaurant concept growth & real estate, and restaurantbusiness analytics. He is one of the co-organizers for RMDS Restaurant BusinessAnalytics Competition in 4Q 2021. He has passion for tech-enhanced operationsin housing, restaurant and education field.

He has acquired $12billion assets over 18 years principal investment career at China VisionaryGroup, Redbridge Student Housing, Panda Express, Peking University FounderGroup, CBRE Global Investors, and AIG Investment. He received an M.S. Degree inReal Estate Development from MIT (2008), an MBA in Finance (1999) and a BA inEconomics (1997) from National Taiwan University. He spent two years as thesecond lieutenant of transportation in Taiwan Navy. He served as President ofMIT Club of Southern California in 2018. He is a licensed real estate broker inCalifornia and has all five professional designations from InternationalCouncil of Shopping Centers (ICSC). He lives in West Covina with his wife andtwo youth boys.
